Our Frittata isn't just for breakfast. Enjoy for any meal of the day! We made our ahead of time knowing that we had a few early mornings ahead. It's been so convenient and easy to heat-and-go. You can easily make substitutions by adding or eliminating vegetables, cheese or other lean proteins. Here's how we made ours:
- 8 eggs
- 3/4 cup 1% milk
- 1 cup cherry tomatoes, halved
- 1/2 cup chopped red onion
- 1/2 cup shredded parmesan cheese
- 8-10 slices lean turkey bacon, cooked and chopped
Preheat oven to 350 degrees. Spray a glass pie pan with non-stick spray. In a mixing bowl, crack eggs, add milk and whisk. Add in all other ingredients and mix well. Pour mixture into pie dish. When oven reaches temperature, bake for 40-45 minutes or until knife comes out clean from center. Let cool for approximately 15 minutes before serving. Recipe makes 4 servings.
