Mushroom and Cheese Mini Egg Omelets

Ingredients

  • 4 cups diced mushrooms
  • 4 whole eggs
  • 1 cup egg whites
  • 1/4 cup shredded swiss cheese
  • 1/4 cup parmesan cheese
  • 1 tablespoon olive oil
  • fresh pepper
  • cooking spray

Directions

Preheat oven to 350 degrees. Steam mushrooms in water for about 5 minutes. When mushrooms are cooked, add olive oil and pepper. Mix well. Spray muffin tin with cooking spray and spoon mushroom mixture evenly into each tin. In a medium bowl, beat egg whites, eggs and cheese. Pour into tins until each is 3/4 full. Cook for about 20 minutes and serve immediately or store in Tupperware in refrigerator to eat during the week.
